"At the Institute I got more than I ever expected...our class this year is the best I’ve ever been in."
It’s the dream job many chef’s only wish for but Melanie Schouten’s wishes have come true. Melanie is moving to Palm Cove in Queensland to work in a new restaurant called Husk.
The Box Hill Institute Hospitality student is currently working at Pearl Restaurant in Richmond, which is where she got the amazing opportunity to work at Husk. Melanie had built up a good working relationship with fellow chef, Nick Holloway, who decided to open his own restaurant and asked Melanie to join him.
Melanie admits her time at Pearl has been amazing and was the beginning of her career. “I actually began as a kitchen hand three years ago and I’ve loved working there,” she said.
The great news just keeps rolling in for Melanie who recently found herself the winner of a Silver Medal for Commercial Cookery in the Regional WorldSkills competition. “I was over the moon...I didn’t think I’d win,” she said.
Melanie will always be thankful for the great experiences she’s had during her apprenticeship. “I’ve totally loved it all. At the Institute I got more than I ever expected...our class this year is the best I’ve ever been in,” she said.
