HistoryFirst opened in 1982, Fountains Restaurant is one of the longest-running restaurants in the eastern suburbs. The facility was named in honour of Geoff Fountain, the founding principal of Box Hill College of TAFE. The restaurant was established to provide a training environment for Box Hill Institute’s hospitality students and is now one of the largest trainers of apprentice chefs in Australia. The Centre’s expertise has been recognised locally, nationally and internationally with many gold medal performances from students at the Culinary Olympics. The excellence of the Institute’s hospitality students has led to them winning many awards at WorldSkills and the Australian Waiter of the Year Competitions. AchieversTraining in Fountains Restaurant has equipped many aspiring hospitality students with the skills and experience they need to work in the real world. Using these skills, our students have successfully applied them in a range of work experience opportunities available through the Institute. These include working during the Melbourne 2006 Commonwealth Games, the Grand Prix and many other major events. Some of Box Hill Institute’s best students and graduates who have trained in Fountains Restaurant include: - Tobie Puttock – working with world-renowned chef Jamie Oliver on the Melbourne version of the restaurant Fifteen
- Curtis Stone – co-host of the ABC's 'Surfing the Menu' and host of Channel 7's 'My Restaurant Rules'
- Guy Grossi – Grossi Florentino Restaurant in Melbourne
- Corrine Dixon – proprietor of Eucalypt Ridge Resort
- Mark Geerlings – reservation manager at Crown Towers.
