Hospitality and Tourism Studies

Who we are

Box Hill Institute’s Centre for Hospitality and Tourism Studies has established itself as the hospitality and tourism industries’ educator of choice.

What we do

The Centre for Hospitality and Tourism Studies services students across a range of programs including:

  • Apprenticeships (Cookery and Bakery)
  • Post-secondary certificates and diplomas (Hospitality, Events and Tourism Management)
  • Traineeships in the workplace
  • School-based programs for years 10, 11 and 12
  • Short courses (wine, cookery, food hygiene and more …)
  • Tailored industry programs for employers seeking to enhance operational performance and retain good staff.

Our facilities

  • Fountains — a licensed training restaurant and bar
  • Box Hill Convention Centre
  • Training kitchens featuring complete individual workstations
  • Dedicated wine and liquor room with beer cellar system and practice bar
  • Demonstration theatre with mirrored chefs demo bench and full audio-visual equipment
  • Computer rooms equipped with the latest Dell PCs, scanners, printers and data projectors
  • Housekeeping unit with mock-up hotel room
  • Hotel reception desk for role-plays
  • Bakers Delight Centre of Excellence — a training bakery with state-of-the-art equipment.

International students, exchanges and training

The Centre for Hospitality and Tourism Studies has extended its reputation nationally and internationally attracting a growing number of International students each year. International students study alongside local students and benefit from the employment opportunities offered in all of our courses. In 2002 CHATS filled over 170 vacancies with international students by organising paid work at the Australian Grand Prix, Football Grand Finals and Melbourne Cup Racing Carnival.

Local Hospitality Management students have an opportunity to study their final semester with our Global Education Network partners in Canada at Southern Alberta Institute of Technology and/or in the USA at Colorado Mountain College.

The Centre has successfully completed several International projects such as pre-opening training for the Sheraton Hotels (Phuket and Bangkok), and will continue its relationship with the Sheraton group offering operational training for its openings across China in 2003.
