GAP Courses in Cookery and Waiting at Tables

Box Hill Institute developed the Growth and Pathways (GAP) Program in 1998 in response to requests from secondary schools seeking additional support for students deemed to be at risk of becoming early school leavers and students wishing to explore various career and pathway options.

GAP is a TAFE taster program for students who are in Years 9 or 10 and are 15 years or older at the commencement of the course. GAP accommodates students seeking to explore career options and pathways. It also gives them the opportunity to experience the TAFE environment and acquire a sense of tertiary education.

If cooking is your scene come along to Box Hill TAFE one day a week and join us in the Hospitality — Cookery program (see below), or if waiting on tables in a five-star restaurant is your thing, join us in the Waiting at Tables program (see below).

Hospitality – Cookery

Time: 9.00am to 2.00pm and also 9.00am - 5.00pm for 8 weeks for

Course content: National Training Package THH21802

This course enables you to develop the skills and knowledge required to assist in commercial cooking operations.

These skills will include basic food hygiene, knowledge of commercial kitchen equipment, knife skills, food preparation, hot and cold food production, and presentation of meals. You will cook a broad range of dishes, such as:

  • Warm Cajun chicken salad
  • Spaghetti with pesto and tomato julienne
  • Fish Supreme Moroccan style
  • Braised Lamb Shanks
  • Mushroom Risotto
  • Roast Chicken
  • Steamed Fish
  • Steamed Pudding with Sauce Anglaise
  • Grilled sirloin steak and grilled vegetables
  • Chocolate Sponge
  • Blueberry Peach and glazed ginger tart.

You will have the opportunity to take the finished product home if you bring a suitable container. This course will help you gainemployment in the hospitality industry, assisting chefs and cooks.

Uniform/equipment

A uniform is required and is based on industry standards. Uniform will comprise of the traditional small check chefs pants, white polo shirt, black bib apron and a flat white chef's hat, approx cost is $75.00. Students are expected to wear sturdy shoes for this class. All uniform requirements can be purchased on your first day of attendance from our Institute supplier - Durawear.

Waiting at Tables

Time: 9.00am to 3.00pm and also 9.00am - 5.00pm for 8 weeks for

(these classes run from 3.30 - 5.00pm)
Duration: 150 hours plus functions by arrangement

Course content: National Training Package THH21802

This course enables you to develop the appropriate skills and knowledge for providing food and beverage service, and gives you the opportunity to work in a real restaurant environment. These skills will include table setting, napkin folding, plate carrying, table clearing techniques, welcoming customers, taking and processing customers orders, opening and serving wine, working in the training bar and preparing a range of non-alcoholic mocktails, beverages and tray service of drinks.

You will also be trained in espresso machine skills, making a range of espresso-based coffees (cappuccino, caffe latte, macchiato). This course also gives the students the opportunity to gain their Provide Responsible of Alcohol Certificate.

The Hospitality - Waiting at Tables GAP program will enable you to seek employment in the hospitality industry, as a waiter or waitress assisting restaurant café operations.

Uniform/equipment

You will need to purchase a Fountains Restaurant uniform from our recommended supplier. The uniform consists of black business trousers, long-sleeved black business shirt and a waiter's friend (wine opener). All requirements can be purchased on the first day of attendance from our Institute supplier, Durawear, for a maximum of $115.00.
